IQF freezing, glazing and an unbroken cold chain are the foundation of frozen fish quality. We explain how they work and why they matter for food service and retail.
The quality of frozen fish is decided not only by the raw material but above all by what happens to it after the catch. Three elements are key: the freezing method, the glaze and an unbroken cold chain. Here is why.
IQF — freezing that locks in freshness
IQF (Individually Quick Frozen) technology flash-freezes single pieces at temperatures as low as -35°C. The faster the freezing, the smaller the ice crystals and the less tissue damage. The result? Once thawed, the product is firm, does not leak and keeps its nutritional value — including valuable omega-3 acids.
Glazing — a protective shield
Glazing is a thin ice layer applied to the fish. It protects against drying out and fat oxidation during storage. Honesty is key: the glaze percentage should be clearly stated and the net weight of the product genuine. At Nova Seafood we always state these parameters openly.
An unbroken cold chain
Even the best-frozen fish loses quality if it thaws even once. That is why a constant -18°C or lower at every stage matters — in the warehouse, in transit and at the customer. Our own logistics let us control this process from supplier to the customer’s door.
- Fast freezing = smaller ice crystals and better texture
- Honest glazing = known net weight and product protection
- Continuous cold chain = consistent quality right to delivery
